Recipe of the month (Dec) - Beetroot Relish

Receiving homemade gifts from garden produce is so lovely. Here is one of of my favourites.
Beetroot relish. From the Australian Women's weekly.
Ingredients
5 beetroot (1kg), peeled, chopped coarsely
4 white onions (800g), chopped coarsely
1 cup (220g) caster sugar
1 tablespoon coarse cooking salt
1 teaspoon ground allspice
2 cup (500ml) malt vinegar
1 tablespoon plain flour
Method
Blend or process beetroot and onion, in batches, until chopped finely. Combine beetroot mixture, sugar, salt, allspice and 1 1/2 cups (375ml) of the vinegar in large saucepan; bring to a boil.
Boil, uncovered, stirring occasionally, 30 minutes.
Stir in blended flour and remaining vinegar; stir over heat until mixture boils and thickens.
Spoon hot relish into hot sterilised jars; seal while hot.
